Baking sheets and baking tray liners are regularly used in both commercial operations and home kitchens. Choosing the right baking trays and tray liner material can greatly impact your baking experience. When the PTFE coating on metal baking sheets wears off, the sheets must be taken off line and recoated by the coating supplier. If they cannot be recoated, they need to be completely replaced. Re-coating usually takes about seven to ten days.
This means seven to ten days of downtime for your business. To limit the loss of revenue due to extended downtime, bakeries and other food processing facilities tend to buy and maintain more trays than necessary.

On the other hand, lining baking sheets is a more economically viable option, as all you have to do is cut the sheets to size and place them into the trays, which takes barely a minute.
To ensure an easy baking experience with PTFE-coated fibreglass fabric liners, consider the following factors.
Baking temperature - The oven temperature should not exceed 500°F / 260°C, which is the maximum working temperature for PTFE coated fiberglass fabrics.
Sheet thickness - A 3 mil.(.003") thick PTFE coated fiberglass sheet is flexible and the least expensive, but has a shorter service life. A 5 mil. (.005") to 10 mil. (.010") PTFE-coated fiberglass sheet is less flexible and more expensive. However, it has a much longer service life. Choose the thickness of the sheet depending on how long you intend to use it.

Cleaning Methods - It is generally recommended that the surface of PTFE coated fiberglass sheet be cleaned with soap and water. Avoid using abrasives as they can reduce the effectiveness of the sheet and negatively affect its service life.
